Welcome to our weekly feature dedicated to covering Susanville and Lassen County’s business scene! Grand openings, new employees, renovations, new hours… each week we’ll keep you up to date with important information about the businesses you rely on.

AlPaKa’s Tacos

AlPaKa’s Tacos has moved to a new location at 60 Hall Street, the former Dirty Dawgs building!

“Having our own space opens up endless opportunities. It gives us the chance to expand our menu, reach even more people, and continue bringing authentic, homemade Mexican flavors to the community we love,” explains owner Alicia Rodriquez.

At AlPaKa’s Tacos, you’ll find a variety of dishes crafted with care, including some of their fan-favorite best sellers:

Deep-Fried Chicken Potato Tacos
A crispy taco filled with chicken and seasoned potatoes, deep-fried to golden perfection and topped with lettuce, cucumbers, cheese, and consomé.

Birria Tacos
Rich, slow-cooked birria tucked into warm tortillas with melty cheese, served with a side of consomé. Always a crowd favorite!

Agua Fresca: A Refreshing Tradition in Every Sip. One of Mexico’s most beloved beverages — simple, vibrant, refreshing, and deeply rooted in tradition. Translating to “fresh water,” Agua Fresca is made by blending fresh fruits and flowers, lightly sweetening it to highlight its natural flavor.

“My dishes represent simplicity, creativity, and the joy of sharing something handmade with the people you love. A timeless reminder of my heritage and heart.”

With their new location, Rodriquez says that they are excited to offer even more delicious options, including Tres Leches Cakes, Pozole, Ceviche, and a variety of new menu items to be revealed later.

“We’re currently working behind the scenes with the City and Health Department to finalize our Official Opening Day. Be sure to follow AlPaKa’s Tacos on Facebook for updates and announcements!”

AlPaKa’s Tacos — a name with a whole lot of meaning behind it.

Alicia Rodriquez explains that the name of the business is inspired by herself and her two children – Alicia, Paisley and Kashton, “The name represents myself and my two children, who are the heart, purpose, and inspiration behind everything we do.”

AlPaKa’s Tacos is a small but dedicated operation led by Rodriquez and her three closest friends: Lindsay, Kelsey and Kayla.

“Together, we’ve built something truly special: a team fueled by passion, family, and the desire to serve exceptional food with an experience that keeps you coming back for more.”

“My love for cooking and baking began with simple cakes and cupcakes I made for family and friends. What started as a hobby quickly grew into a deeper passion to share fresh, homemade food with my community. Every dish is inspired by the flavors and traditions passed down from my grandmother Socorro and my mother Maria — the two women who gave me the hands, the heart, and the courage to do what I do today.”

“In June 2024, the four of us took a leap of faith at our very first Farmer’s Market. A HUGE thank you to LARP for believing in us and cheering us on every step of the way! We were nervous, excited, and unsure of what to expect… but the community showed up with incredible support, and we SOLD OUT at our first event!”

Since then, Rodriquez says they have grown through countless markets, events and pop-ups — each one teaching them and pushing them and reminding them why they love what they do.

“Thank you — truly — to everyone who has supported us from the very beginning. We cannot wait to serve this amazing community from our new home.”
